Chapter 01 · What you taste

Cider, distilled and laid down in oak

Calvados starts as cider from apples, sometimes with pears added, which is distilled and then goes into oak. The region is Normandy; Pays d’Auge has its own designation with a compulsory double distillation in a pot still. No sugar goes in: what you taste comes from the apple and the wood. VS, VSOP and XO refer to the youngest eau-de-vie in the blend.

Chapter 02 · The middle ground

VSOP: a few years in cask

With VSOP, the youngest eau-de-vie has spent a few years in cask; VS stands for a shorter ageing and Fine for the youngest work. In those years the sharpness disappears and colour comes in, while the apple stays recognisable. Fruit and wood are most in balance here. The letters come from cognac, the requirements do not.

Chapter 03 · Long in cask

XO and hors d’âge

With XO, even the youngest part of the blend has spent years in oak; hors d’âge is used by the houses for the same or for even older work, without a strict definition. The longer in wood, the darker the bottle and the more dried fruit, nut and clove. A year on the label means one harvest, not blended.

Forty per cent is the norm

Calvados comes off the still much stronger and is reduced with water, almost always to forty per cent. The odd bottle is bottled at cask strength; that calls for a few drops of water, and then it opens up. Serve at room temperature: cold, calvados loses its apple fruit.

What time in the cask does to the bottle

An old calvados is above all a matter of time. Every year part of it evaporates through the wood, the angels' share, and what remains becomes more concentrated in flavour. A house that bottles an old blend has less of it left than it put in. That explains the difference between the designations on the shelf.

Calvados is distilled from cider, and that cider from apples, sometimes dozens of varieties mixed together, most of which are far too sour or too bitter simply to eat. It is precisely those varieties that give the spirit its character.

The designations resemble those of cognac: Fine or VS spends at least two years in oak, VSOP four and XO six years or more. The longer, the less apple and the more nut and caramel.

In Normandy it is traditionally served in the middle of a long meal, as the trou normand, to make room for the next course.
