Why here

The Portuguese cousin of grappa

When grapes have been pressed for wine, the skins, seeds and stalks are left over. In Portugal that mass is called bagoço. If you ferment it and distil it in a copper alambique, you get aguardente bagaceira.

The same raw material yields grappa in Italy, marc in France and komovica in the Balkans. The difference lies in the grapes, the region and the way of distilling. Portugal has a long tradition of it: little gets thrown away.

We have one bottle of it. It belongs on our shelf with eau de vie, obstler and slivovitz, where fruit and grape distillates from all over Europe stand together.

What is aguardente bagaceira?

Aguardente is the Portuguese word for distilled spirits, literally burning water. Bagaceira refers to the bagoço: the skins, seeds and stems left over after pressing. These residues contain aromatic oil from the grape skin, and that is what gives bagaceira its character. Commercial bottlings are generally between 37 and 52 percent.

About the brand

A winery from the Bairrada

  • The house in brief
  • 1952Caves Altoviso begins.
  • SangalhosThe village in the Bairrada, north of Coimbra.
  • BroadSparkling wine, still wine, aguardente and liqueur.
  • BagoçoThe pressed grape residue that forms the raw material.

Caves Altoviso is located in Sangalhos, in the Bairrada in central Portugal. The company started in 1952 and makes sparkling wine using the traditional method, still wine, aguardente, liqueurs and syrups.

The Bairrada is best known for sparkling wine and the red Baga grape. Where wine is pressed, bagoço is left over, and where bagoço is left over, bagaceira is distilled. That is how the two have been tied together in Portugal for centuries.

In Portugal, bagaceira is usually served after the meal, neat and at room temperature, or in a cup after the coffee.

Bagaceira, grappa or marc: what is the difference?

All three start from the same raw material: the pressed grape remains. What distinguishes them is origin and regulation. Grappa may only be called that if it is made in Italy, marc comes from France and bagaceira from Portugal. The grape varieties also differ per country, and they largely determine the aroma.

Which bottle

Who is this bottle for?

If you know grappa and want to find out how the same raw material turns out in Portugal, this is the bottle to start with. At 38 percent it is at the lower end of what is usual for bagaceira.

We have one in stock. Call if you want to know whether more is coming, or if you are looking for an older, wood-aged bagaceira.
