Chapter 01 · What you taste

Distilled fruit, and nothing else added

An eau de vie is distilled fruit without added sugar: pear, cherry, plum, mirabelle. Under the same heading fall obstler from the Alps, slivovitz and rakija from Central and Eastern Europe, palinka from Hungary and marc from France; marc comes from the skins and seeds of wine grapes. Most bottles are clear. It smells of ripe fruit and tastes dry.

Chapter 02 · France

Alsace and Burgundy

In Alsace, fruit from the region is distilled: kirsch from cherries, poire williams from pears, quetsch and mirabelle from plums. One litre of kirsch takes dozens of kilos of cherries. In Burgundy and Champagne, marc is distilled from grape skins and seeds. Clear here means young; the odd marc matures in wood.

Why this drink is high in alcohol

An eau de vie is usually bottled at around forty per cent, because the aroma of the fruit is in the alcohol; diluted, it disappears. Lower in alcohol it comes close to schnapps, often sweetened and served cold. An eau de vie is served lightly chilled, not ice-cold, in a tulip-shaped glass, so the aroma has room.

Why here

Eau de vie and obstler on the Brink

Eau de vie is fermented and then distilled fruit, without added sugar or alcohol. In Germany and Austria it is called obstler, in Alsace and Switzerland eau de vie, in Hungary pálinka.

A fruit liqueur is sweet and gets its flavour from added fruit. An eau de vie is dry: only what came out of the still.

A kilo of fruit yields little distillate; that is why these bottles are not in the cheap corner. Kirsch from cherries, williams from pears, mirabelle and raspberry are the best known.

In Central Europe, eau de vie is served cold and in small measures, after the meal. As a digestif, not as a drink beforehand.

Frequently asked questions

What is the difference between eau de vie and a fruit liqueur?

An eau de vie is distilled fruit and dry. A liqueur is sweetened and gets its flavour from added fruit or aroma. Two very different bottles, at the table too.

Is pálinka the same?

It is the same family. Pálinka is the Hungarian protected name for fruit distillate; obstler is the German and Austrian term, often for a blend of fruits.
