Why here

Marc from destemmed grapes

Marc de Bourgogne is distilled from what remains after the grapes are pressed. At Jacoulot, those residues are first destemmed: the stalks are removed before anything else is done with them. The house calls this an essential step for the finesse of its marc.

The grape is pinot noir, the blue grape of Burgundy. A long ageing follows; the house makes a point of that. The label says 45 percent, on the robust side for this type.

We have one bottle of it, on the shelf with eau de vie, obstler and slivovitz where the other grape distillates also stand.

Why destem?

The stems of the grape bunch contain compounds that give a green, woody note during fermentation and distillation. If you remove them, a softer distillate remains in which the grape itself gets more room. Not every distiller does it; Jacoulot expressly mentions it as part of his method.

About the brand

In Romanèche-Thorins since 1891

  • The house in brief
  • 1891Vincent Jacoulot distils his first grapes.
  • 1931His son Roger takes over the house.
  • 2013Philippe Vançon becomes owner and cellar master.
  • BroadMarc, fine, eaux-de-vie, liqueur, whisky and rum.

Vincent Jacoulot lived from 1862 to 1931. After his military service, in 1891 he distilled his first grapes into eau-de-vie de Bourgogne, in Romanèche-Thorins, on the southern edge of Bourgogne.

His son Roger took over the house in 1931. Since 2013 Philippe Vançon has been owner and cellar master; he runs the business with his wife Anne and their sons Guillaume and Romain.

Besides marc and fine de Bourgogne, the house also makes fruit distillates, liqueurs and crèmes, and for some years now whisky matured in marc casks and rum matured in casks that held fine de Bourgogne.

Marc or fine de Bourgogne?

Marc is distilled from the pressed grape residue, fine from wine. Both come from the same region and often from the same grape, but the fine is generally rounder and the marc sturdier and more grape-forward. This bottle is a marc.

Which bottle

Who is this bottle for?

At 45 percent this is a marc for those who already know the style and are not put off by a sturdy bottle. The pinot noir and the destemming are what set it apart from an ordinary marc.
