Why here

The most outspoken rum there is

Where most distilleries finish their fermentation in a day or two with cultured yeast, Hampden lets it run for up to fifteen days with what is naturally in the air and in the vats. Added to that are dunder and muck: residues full of bacteria from earlier batches.

That yields extremely high ester values, the compounds that make rum smell of ripe banana, pineapple and solvent. Distillation is exclusively in copper pot stills, in batches of about seven hours.

What are esters, and what does DOK mean?

Esters are aroma compounds that form during fermentation and distillation; they give Jamaican rum its fruity, almost solvent-like character. Jamaica has established marque codes for the ester content of a batch. OWH is the lightest, with forty to eighty grams per hectolitre of pure alcohol; LROK sits around two to four hundred; DOK, at fifteen hundred to sixteen hundred, is the legal maximum. Hampden makes them all.

About the estate

Hampden is in Trelawny, the parish in north-west Jamaica known for its heavy rum style. The estate dates back to the eighteenth century; since 2009 it has belonged to the Hussey family.

There are six copper pot stills, including a John Dore from 1960. The molasses comes from their own cane and is fermented unpasteurised, precisely because the wild yeasts and bacteria have to do the work.

Since 2010 the rum has again been aged on the estate itself instead of in Europe. In that climate six to seven percent evaporates per year; a fifteen-year-old Hampden is therefore a rare thing.

Fifteen days of fermenting on whatever naturally lives in the vat.

Which bottle

Where best to start

Start with the Pure Jamaican Rum. That is the bottle with which the estate returned as its own brand in 2018, and the best introduction to the style.

The Overproof at 60 percent is not heavier in taste but in strength; it is often used in tiki cocktails.

The Great House editions are released annually in limited numbers. Call 0570 541 278 if you would like to know what is in stock now.
