In Jamaica a lot of rum is distilled in pot stills, in small batches. This way of distilling lets through more aromatic compounds than a continuous column, and that is exactly what you taste.
These aromatic compounds are called esters. The higher the ester content, the more exuberant the aroma: overripe banana, pineapple, oil, varnish. Some distilleries even put the ester content on the label.
In cocktails Jamaican rum is indispensable: a tiki drink or a mai tai is only complete with a dash of this style. Neat works too, preferably at room temperature and without ice.
