The Dominican Republic works mainly with column distillation and maturation in casks that previously held bourbon. This produces a rum that is soft, round and approachable.
In the glass you will recognise caramel, vanilla, coconut and dried fruit such as raisin and date. The finish is usually warm and gives an impression of sweetness.
With round, soft rum, look out for any mention of added sugar. Not every brand is open about it; if you want to know how dry a particular bottle is, just ask us.
