The name Demerara comes from the river and the area where the sugar cane grew. Rum from Guyana is nowadays distilled in one place, with historic equipment that no longer exists elsewhere.
Among them are wooden stills and columns of centuries-old make. They give the rum a heavy, smoky and lightly sweet signature that you recognise immediately.
In the glass: caramel, molasses, coffee, dried plum and a woody, almost tarry note. Neat, it is a wintry rum; in a dark and stormy it adds depth.
