Why here

Arak: rum’s Indies cousin

Arak from Java is, like rum, made from sugar cane, but the fermentation is different: fermented rice is involved. That gives a spirit with a distinctive, slightly smoky-sweet signature.

In the Netherlands that drink has a long history, among other things as the base for punch. Van Wees, the Amersfoort liqueur distillery also known as De Ooievaar, bottles it under its own label.

Van Wees is a Dutch liqueur distillery from Amersfoort, also marketed under the name De Ooievaar. The house is known mainly for jenevers and liqueurs; this arrack belongs to the wider range.

Arak from Java has been coming to the Netherlands for centuries. The name Baru means new in Indonesian.

We shelve this bottle under rum because that is the closest it comes in terms of raw material and use. Strictly speaking, arak is a category of its own.

Same raw material as rum, a very different fermentation.

Practical

What this bottle goes with

Arak has traditionally been used in punch and in mixed drinks, and in the kitchen it is known from pastry and from the classic Dutch-Indonesian recipes.

Also from the same house: the Rum Cigüeña Carta 1975.
