Dates wrapped in bacon with Kalkwijck Korenwijn 3 Jaar Single Cask Oloroso
From the oven come medjool dates wrapped in half a slice of breakfast bacon and baked for twelve minutes at 190 degrees until the bacon is crisp and the date is melted inside. Opposite stands a korenwijn from Vroomshoop that spent three years in a single oloroso sherry cask, from which it takes the dried-fruit note that the date continues.

The bottle
Kalkwijck Korenwijn 3 Jaar Single Cask Oloroso comes from Kalkwijck Distillers in Vroomshoop, in Overijssel. It is a korenwijn of 40% ABV in a 70 cl bottle, matured for three years in a single oloroso sherry cask, made from rye, maize and malted barley that the company grows itself; the description calls it soft in taste. It does not give an exact malt wine share. The designation korenwijn requires at least 51% malt wine in the alcohol component, at least 38% ABV and at most 20 grams of sugar per litre; at 40% ABV this bottle is above that minimum.
The combination
Why this works together
Dates in bacon are two things in one bite: a date that melts into syrup at 190 degrees and salty, crisply fried bacon around it. That is sweet against salty, and whatever is served with it has to cope with both sides. A young jenever only handles the salt and leaves the date empty-handed. This korenwijn does exactly the opposite: three years in an oloroso sherry cask brings a note of dried fruit, raisin and nut, and that is the same family the medjool date belongs to. The malt wine underneath adds a grain-sweet roundness that catches the salt of the bacon, and at 40% ABV there is enough alcohol to clear the bacon fat in one sip. The rye in the mash adds a spicy side that keeps sweet from landing on sweet. That way the bite is rounded off rather than doubled.

In the glass
Serving
Pour the Kalkwijck Korenwijn at room temperature into a tulip glass, filled to the rim. The dried-fruit notes from the oloroso sherry cask are the whole reason for this pairing and they only come loose around 18 °C; chilled, the cask disappears and only the grain remains. Because the dates come warm from the oven, a jenever at room temperature also suits better in temperature than a cold one.
