Bottle of San Miguel, beer

From the shelf

The bottle

San Miguel comes from San Miguel in Spain and is a pils of 5.4 percent by volume. The bottle holds 33 centilitres. The beer is golden yellow, light-bodied and dry, with grain on the nose and a modest hop bitterness in the finish.

San Miguel

The combination

Why this works together

This dish is essentially oil with garlic and chilli. Carbonation lifts that oil off the palate, and the low temperature of the beer immediately softens the sting of the chilli. A heavier or sweeter beer would work against the garlic; a dry pils lets it stand.

The dish

  • Ready in 25 minutes
  • Type starter

What you need

  • 600 grams of prawns (gamba’s), peeled and cleaned
  • 6 cloves of garlic, thinly sliced
  • 150 millilitres olive oil
  • 2 dried red chillies
  • 1 teaspoon sweet paprika powder
  • 2 tablespoons finely chopped flat-leaf parsley
  • 1 lemon, cut into wedges
  • 1 white baguette
  • salt

How to make it

  1. Pat the prawns dry with kitchen paper and sprinkle them lightly with salt.
  2. Put the oil with the garlic in a cold frying pan and place it over medium heat.
  3. Let the garlic warm up slowly and infuse for 4 minutes, until the slices are light gold.
  4. Crumble the chillies over it and let them fry along for 30 seconds.
  5. Turn the heat up high and put the prawns in the pan. Fry them for 2 minutes, turn them and fry them for another minute.
  6. Take the pan off the heat and stir in the paprika powder; over the heat it burns and turns bitter.
  7. Sprinkle the parsley over it and season with salt.
  8. Put the pan on the table with the baguette and the lemon wedges alongside.

In the glass

Serving

Serve at 4 to 6 degrees in a small, straight glass and rather pour two half glasses than one full glass. That way the beer stays cold until the last sip.
