Bottle of Lindemans Kriek, beer

From the shelf

The bottle

Lindemans Kriek comes from Lindemans in Belgium and has 3.5 percent alcohol by volume. The bottle contains 25 centilitres. A kriek is made by adding cherries to lambic; that spontaneously fermented base brings acidity, so the beer stays fresh despite the fruit.

The combination

Why this works together

With a sweet dessert, a sweet glass is rarely a good idea: the sweetness piles up and the flavour turns flat. A kriek sets the sourness of the lambic against the sugar in the compote and the cream, so the cherry on the plate comes forward more sharply. Meanwhile the carbonation clears away the whipped cream and the butter from the wafer.

What you need

  • 250 grams of flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 350 millilitres of milk
  • 2 eggs
  • 100 grams butter, melted
  • 500 grams of pitted cherries
  • 4 tablespoons granulated sugar, for the compote
  • 1 teaspoon cornflour
  • 250 millilitres of whipping cream
  • 1 lemon
  • 1 pinch of salt

How to make it

  1. Put the cherries with the sugar for the compote and a spoonful of water in a saucepan and bring to the boil.
  2. Let them simmer for 8 minutes, stir the cornflour smooth with a spoonful of cold water and use it to thicken the compote. Squeeze in lemon juice and let the pan cool.
  3. Mix the flour, baking powder, sugar and salt in a bowl.
  4. Beat the eggs loose with the milk and pour this mixture into the flour. Stir to a smooth batter.
  5. Stir in the melted butter and let the batter rest for 10 minutes.
  6. Heat the waffle iron and grease it lightly. Bake the waffles one by one for 3 to 4 minutes, until golden brown.
  7. Whip the cream to soft peaks; stop as soon as the whisk leaves a trail.
  8. Put the waffles on warm plates, spoon the compote over them and put the whipped cream next to them.

In the glass

Serving

Serve at 5 to 7 degrees in a tulip glass or a flute. Pour slowly, because the carbonation of a kriek rises quickly; a small head is enough.
