Ingredients

  • 500 grams of strawberries
  • 250 millilitres of whipping cream
  • 2 tablespoons of icing sugar
  • 4 sprigs of mint

Method

  1. Rinse the strawberries, drain them and remove the hulls.
  2. Halve large strawberries and dust them with half of the icing sugar.
  3. Whip the cream with the rest of the icing sugar to soft peaks.
  4. Divide the strawberries and whipped cream among small bowls and garnish with a sprig of mint.
With the cheeseFresh ricotta with honey

Ingredients

  • 200 grams fresh ricotta
  • 2 tablespoons honey

Method

  1. Spoon the ricotta into a small bowl.
  2. Pour the honey over just before serving.
Goat's cheese with honey on toastStarterGoat's cheese with honey on toast

Ingredients

  • 1 baguette
  • 150 grams soft goat's cheese
  • 2 tablespoons honey
  • 4 sprigs of thyme

Method

  1. Preheat the oven grill.
  2. Slice the baguette and lightly toast the slices on one side.
  3. Top the untoasted side with goat's cheese and sprinkle with thyme leaves.
  4. Place under the grill for 3 to 4 minutes until the cheese is soft and lightly coloured.
  5. Drizzle with honey and serve warm.
