From the shelf

The bottle

Brouwerij Chamaven Grijp IPA comes from Brouwerij Chamaven in the Netherlands and is an IPA of 5 percent by volume. The bottle holds 33 centilitres. This IPA stays light in alcohol but keeps the characteristics of the style: a clear hop bitterness and an aroma that leans towards citrus.

The combination

Why this works together

Melted cheddar sticks to the palate and the jalapeño burns afterwards. The carbonation and the hop bitterness of an IPA take that cheese layer away, and because this beer stays at five percent, the alcohol does not drive the sharpness of the pepper up further. The citrus tone from the hop connects with the lime in the salsa.

What you need

  • 300 grams tortilla chips
  • 250 grams grated cheddar
  • 400 grams canned kidney beans, drained
  • 2 jalapeño peppers, in rings
  • 4 tomatoes, diced
  • 1 red onion, finely chopped
  • 2 limes
  • 1 bunch of coriander, roughly chopped
  • 200 milliliters sour cream
  • 1 avocado
  • salt and freshly ground black pepper

How to make it

  1. Preheat the oven to 200 degrees.
  2. Mix the tomato with half of the red onion, the juice of a lime, half of the coriander, salt and pepper into a salsa. Let it stand for a moment.
  3. Spread half of the chips over an ovenproof dish or baking tray.
  4. Spread half of the beans, half of the jalapeño and half of the cheddar over it.
  5. Put the rest of the chips on top and repeat with the rest of the beans, the jalapeño and the cheese.
  6. Bake everything for 10 minutes, until the cheese has melted and is colouring at the edges.
  7. Cut the avocado into cubes and mix it with the juice of the second lime.
  8. Spoon the salsa, the avocado, the sour cream and the rest of the onion and the coriander over the warm chips and put the dish on the table straight away.

In the glass

Serving

Pour at 6 to 8 degrees in a tulip glass. With salty and spicy food this beer is most pleasant with a small head and a glass that you top up more often when it is half full.
