All grain in, and three times through the still
Ardara works with a method that the house itself calls all grain in: the grain goes along into the wash still, instead of the wort being filtered off first. That is how the illegal poitín distillers in Donegal worked, out of necessity. Here it is a choice.
Add to that triple distillation, and peat at fifty-five ppm. That combination is unusual in Ireland; the house itself says it is the only one on the island that makes peated whiskey this way. Construction began in October 2020 and distilling has taken place since January 2022, so this whiskey is still young.

Ardara is a village in County Donegal, on the Wild Atlantic Way. The name comes from the Irish Ard an Rátha, the height of the ring fort. The distillery stands on The Show Field, on the bank of the Owentocker.
Donegal was not known for legal distilleries but for poitin, the illegal distilling. After almost two centuries Ardara brings legal whiskey distilling back there, and deliberately returns in its process to how those distillers worked.
Behind the distillery are James and Moira Doherty of Sliabh Liag Distillers, also the owners of the Silkie brand. That distinction matters: Silkie is bought-in whiskey, Ardara is its own distillate from its own stills.
The grain goes into the still along with it, as the poitín distillers did.
What to look out for
There is no age statement on the bottle. The distillery has been distilling since January 2022, so expect a young whiskey.
For the cask strength, check the percentage and the bottle number on the label; they differ per edition.
