Why this works together

Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.

Ingredients

  • 200 grams smoked salmon
  • 1 bunch of dill
  • 100 grams crème fraîche

Method

  1. Finely chop the dill and stir half of it into the crème fraîche with a little pepper.
  2. Spread the toasts with the crème fraîche.

Aged GoudaWith the cheeseAged Gouda

A cigar with Dingle Bealtaine

We have paired this cigar with Yellow Spot 12 Years Old Irish Whiskey, another whisky from Ireland.

Our choice

Arturo Fuente Don Carlos No. 4

Dominican corona of 143 mm under a Cameroon wrapper: nutty and spicy alongside apple and custard.

Why this works together

The Don Carlos No. 4 is a corona of 143 mm under a Cameroon wrapper. That wrapper is spicy without sharp pepper and gives nut rather than earth. That nuttiness runs in step with the nuts in the whiskey, while the spice lifts out its custard sweetness. At 46 per cent ABV the bottle has enough weight to carry that spice.

Also good with this whisky

  • Davidoff Millennium Blend RobustoRobusto of 127 mm, shorter and firmer, with more pepper against the sweetness.
  • Hoyo de Monterrey Epicure No. 1Cuban corona gorda of 143 mm with sweeter wood, closer to the toffee.
  • Montecristo Petit EdmundoPetit robusto of 110 mm with cocoa, for a shorter moment.

We do not sell cigars; we supply the whisky.
