Dingle is located in Milltown, just outside the town of the same name in County Kerry, in a converted sawmill on the Atlantic coast. Oliver Hughes started the distillery in 2012 together with Liam LaHart and Peter Mosley, the same trio who got Irish craft brewing going in 1996 with Porterhouse. It was the first new, privately owned distillery in Ireland in well over a hundred and fifty years.
The financing was unusual. Five hundred casks were sold in advance to private individuals, who thereby became ‘Founding Fathers’: their name, filling date and cask number were painted on the cask, and they could later decide for themselves when it would be bottled. In this way the buyers paid for the distillery before a single drop existed.
It is distilled three times in three specially designed copper stills. The location helps: on the Gulf Stream, in the westernmost town in Europe, the climate stays mild and humid, which gives even maturation.

The Celtic wheel of the year
A series in which each release is named after a moment in the old Irish calendar year: Samhain for the start of winter, Lá ’le Bríde for spring, and so on. Each bottle has its own cask finish. We have two of them; the series has since been completed.

Single malt is made entirely from malted barley. Single pot still uses both malted and unmalted barley and is the typically Irish style: creamier and lightly spicy. Dingle makes both, and we stock both.
Wat is het Founding Fathers-programma?
Bij de start in 2012 werden vijfhonderd vaten vooraf verkocht aan particulieren. Hun naam, vuldatum en vatnummer werden op het vat geschilderd, en zij bepaalden zelf wanneer er werd gebotteld. Zo werd de distilleerderij betaald voordat er whiskey bestond.
