At the table with LAPHROAIG PORTWOOD
Whisky, full and rich · Scotland · 48%
Why this works together
Gekozen op de soort (whisky) en de naam (gerijpt op een vat van versterkte wijn of rum). Een volle, rijke whisky past bij wild, gedroogd fruit en desserts met karamel of chocolade.
What is needed
For 4 people
With the mealDuck breast with cherry sauce
Ingredients
- 2 duck breasts
- 300 grams cherries
- 100 millilitres red wine
- 1 tablespoon honey
- 20 grams butter
- 800 grams potatoes
Method
- Peel the potatoes and boil them in salted water for about 20 minutes until tender.
- Score the skin of the duck breasts in a diamond pattern, season with salt and pepper and stone the cherries.
- Place the duck breasts skin side down in a cold pan and cook them for 8 to 10 minutes until the skin is crisp.
- Turn them over, cook them for 3 to 4 minutes for pink, and leave them to rest, covered, for 5 minutes.
- Pour most of the fat out of the pan and cook the cherries with the red wine and the honey for 5 minutes to make a sauce.
- Whisk the butter into the sauce, slice the duck breast and serve with the sauce and the potatoes.
With the cheeseStilton

- 20 grams butter
- 3 tablespoons cocoa powder
Method
- Finely chop the chocolate and put it in a bowl.
- Bring the cream just to the boil and pour it over the chocolate.
- Leave for 1 minute, stir to a smooth ganache and stir in the butter.
- Leave the ganache to set, covered, in the fridge for at least 2 hours.
- Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
- Keep cool and take them out of the fridge a quarter of an hour before serving.

A cigar with LAPHROAIG PORTWOOD
Judging by its name, this whisky has spent time in a sherry or wine cask. We have paired this cigar with Tamdhu 12 Years Old Speyside Single Malt Scotch Whisky, which has done the same.

Quai d’Orsay No. 54
Cuban robusto extra of 135 mm, cedar and wood, restrained enough not to crowd out the sherry sweetness.
Why this works together
The No. 54 is short and thick at 135 mm. Quai d’Orsay is the restrained one among the Cuban houses: cedar and flowers instead of earth and pepper. That restrained tone does not clash with the sherry oak of Tamdhu, but does put a dry layer of wood alongside it, so that the sweetness does not linger.
Also good with this whisky
- Hoyo de Monterrey Epicure No. 1Corona gorda of 143 mm, milder and longer, with the same soft woody tone.
We do not sell cigars; we supply the whisky.
