Why this works together

Chosen by type (whisky) and name (peat or smoke). A smoky whisky calls for dishes with a pronounced character of their own: smoked fish, something from the grill or a robust blue cheese.

What is needed

For 4 people

Smoked salmon with dillWith the mealSmoked salmon with dill

Ingredients

  • 200 grams smoked salmon
  • 1 bunch of dill
  • 100 grams crème fraîche
  • 8 small toasts

Method

  1. Finely chop the dill and stir half of it into the crème fraîche with a little pepper.
  2. Spread the toasts with the crème fraîche.
  3. Top with a piece of smoked salmon and garnish with the rest of the dill.
Aged GoudaWith the cheeseAged Gouda

Ingredients

  • 160 grams aged Gouda

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.
Chocolate trufflesAfter the mealChocolate truffles

Ingredients

  • 200 grams dark chocolate
  • 150 millilitres whipping cream
  • 20 grams butter
  • 3 tablespoons cocoa powder

Method

  1. Finely chop the chocolate and put it in a bowl.
  2. Bring the cream just to the boil and pour it over the chocolate.
  3. Leave for 1 minute, stir to a smooth ganache and stir in the butter.
  4. Leave the ganache to set, covered, in the fridge for at least 2 hours.
  5. Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
  6. Keep cool and take them out of the fridge a quarter of an hour before serving.

After the meal

A cigar with Peat's Beast

A smoky whisky, as the name says. We have worked out this cigar alongside Talisker Whisky 10 Years Old, also a smoky whisky.

Cigars
Our choice

Bolívar Belicosos Finos

Full-bodied Cuban pyramid, earthy and spicy; pepper against the pepper of Skye.

Why this works together

A belicoso tapers towards the head, so the smoke comes through a narrower opening and arrives more concentrated. That makes the pepper of the wrapper sharper than with a straight size. Pepper alongside pepper could turn flat, but the salt and syrup in the whisky offer a counterpoint.

Also good with this whisky

  • Montecristo No. 2The best-known Cuban pyramid, medium to full; slightly rounder and so the calmer choice.
  • Partagás Serie P No. 2Full-bodied pyramid with the earthy house style of Partagás.
  • Romeo y Julieta BelicososSame format, woodier and more floral, giving the salt in the whisky more room.

We do not sell cigars; we supply the whisky.
