Why this works together

Chosen by type (whisky) and name (peat or smoke). A smoky whisky calls for dishes with a pronounced character of their own: smoked fish, something from the grill or a robust blue cheese.

What is needed

Barbecued spare ribsWith the mealBarbecued spare ribs

Ingredients

  • 2 kilos spare ribs
  • 6 tablespoons barbecue sauce
  • 2 tablespoons honey
  • 2 teaspoons smoked paprika
  • 2 cloves garlic
  • 4 corn cobs

  2. Rub the spare ribs with the paprika, salt and pepper, wrap them in aluminium foil and cook them in the oven for 2 to 2.5 hours.
  3. Mix the barbecue sauce with the honey and the crushed garlic.
  4. Boil the corn cobs for 10 minutes in salted water.
  5. Grill the spare ribs and the corn for 10 minutes on the hot barbecue, brushing the ribs regularly with the sauce until they shine.

After the meal

A cigar with The English Whisky Heavily Smoked Vintage 2010

A smoky whisky, as the name says. We have worked out this cigar alongside Caol Ila Islay Single Malt 12 Years Old, also a smoky whisky.

Cigars
Our choice

Ramón Allones Specially Selected

Full-bodied Cuban robusto with earth and dark fruit; holds its own against peat.

Why this works together

Peat smoke and tobacco smoke add up, so this only works if the cigar itself has weight. The Specially Selected does: it is full, earthy and spicy and will not be overpowered. The sweet malt and toffee in the whisky absorb the dryness of the tobacco, where a bone-dry whisky would make the whole thing harsh.

Also good with this whisky

  • Bolívar Royal CoronaJust as heavy, a little more peppery; the choice if you want to counterbalance the peat rather than accompany it.
  • Partagás Serie D No. 4Earthy and spicy, and the best-known full-bodied Cuban robusto.
  • Cohiba RobustosMedium to full, with the creamy note of the house; slightly softer than the other three.

We do not sell cigars; we supply the whisky.
