Why here

Two stills, two stories

Still K comes from Karuizawa. When that closed distillery was auctioned, Gaiaflow bought the complete production equipment in 2015 and had it moved and restored. Pot Still K is a lantern-shaped still from the 1950s; the malt mill comes from there too.

Still W is wood-fired. A Forsyths still, fired directly on thinned cedar wood from the forests of Shizuoka, at roughly eight hundred degrees. The firewood has to dry for months and operating it requires specially trained staff.

The range

The bottles we have in stock

Mind the letter in the name: K and W stand for the two stills, which are deliberately kept separate.

About the method

K, W and S

  • The three stills
  • KFrom Karuizawa, indirectly steam-heated.
  • WForsyths, direct-fired on cedar wood.
  • SForsyths spirit still, steam plate heating.
  • SeparatedBottlings per still, not blended.

K yields a lighter, fruitier distillate, W a heavier, more robust one. The distillery keeps the bottlings separate per still (Prologue K, Prologue W, Pot Still K, Pot Still W), so you can taste the difference yourself. That is unusually open for a whisky house.

Fermentation takes place in wooden washbacks: four of Oregon pine and eight of Japanese cedar from Shizuoka. Three malt categories are in use: imported malt, Japanese malt, and barley grown locally in Shizuoka.

The first bottling was Prologue K: a three-year-old single malt from ex-bourbon casks at 55.5 percent, composed from thirty-one casks.

Two stills, bottled separately, so that you can taste the difference.

Practical

What these bottles go with

Drink it neat. Anyone who gets hold of both a K and a W has a tasting of a single distillery explaining itself.

Japanese whisky is scarce and prices are climbing. What is on the shelf is what there is.
