Does whisky continue to mature in the bottle?
No. Whisky matures in the cask and not in the bottle. Glass gives off nothing and lets virtually no air through, whereas oak gives off substances and lets air through. A 12-year-old whisky therefore stays 12 years, even if the bottle stays sealed in the cupboard for another thirty years. Maturation stops at the moment of bottling.
In brief
The key figures
| Where maturation takes place | In oak casks |
|---|---|
| Maturation in the bottle | Not applicable; glass releases nothing |
| Maturation requirement for Scotch | At least 3 years |
| Maximum cask capacity Scotch | 700 litres |
| Age on the label | Refers to the youngest component |
| Storage | Away from direct sunlight |
| Unopened bottle | Does not deteriorate when stored out of the sun |
| Best-before date | Not mandatory for drinks from 10% alcohol |
Why does whisky not mature in glass?
Glass neither absorbs nor releases flavour compounds, so nothing more is added inside a closed bottle.
Maturation is the interplay between whisky and wood. Substances are released from the oak, air slowly enters through the pores of the cask, and moisture and alcohol evaporate. A glass bottle does none of those three things. The Scotch Whisky Association puts it briefly: unlike wine, whisky does not mature in the bottle.
Does a 12-year-old whisky always remain 12 years old?
A bottle with 12 years on the label stays 12 years, even if you leave it in the cupboard for a hundred years.
The age belongs to the time the whisky lay in the cask. As soon as it is bottled, that counter stops. Collectors sometimes speak of a bottle from 1970, but then it concerns the bottling year and not a maturation period. So when reselling, the number on the label still counts.
How do you store a bottle of whisky?
Keep whisky out of direct sunlight; according to the Scotch Whisky Association the whisky then does not deteriorate, even if the bottle is already open.
Light and heat are the two things you can do something about yourself. A cupboard or a tube works better than a windowsill. A bottle that is only partly filled contains a lot of air; if you want to keep such a remainder for a long time, you can pour it into a smaller bottle. Maturation does not come into it, because that requires wood.
Why does wine still change in the bottle?
Wine contains acids, sugar, pigment and tannin that keep reacting slowly with one another after bottling.
Whisky has hardly any of those components. What is in it comes from the grain, the yeast and the cask, and is already complete at bottling. In addition, the high alcohol content inhibits the reactions that do get going in wine. Ageing in the bottle therefore belongs to the story of wine, but not to that of whisky.
Can a bottle of whisky go off?
Spirits with 40% alcohol do not spoil, and European labelling rules do not require a shelf-life date for drinks with 10% alcohol or more.
