What is rye whiskey?

Rye whiskey is American whiskey from a mash of at least 51 percent rye. The distillate comes off the still at no more than 80 percent, matures in new charred oak casks and is bottled at a minimum of 40 percent. From two years of maturation it may be called straight rye. In Canada the name works differently.

In brief

The key figures

Batter at least 51 percent rye, according to 27 CFR 5,143
Distillation at most 160 proof, or 80 percent alcohol
Cask new charred oak casks
Strength at filling at most 125 proof, or 62.5 percent alcohol
Bottling at least 80 proof, or 40 percent alcohol
Straight rye at least 2 years in the cask, without added colouring, flavouring or blending material
Canada Canadian whisky, Canadian rye whisky and rye whisky are legally the same product
Canadian requirement grain mash, at least 3 years on small wood, made and aged in Canada, at least 40 percent

How much rye must there be in rye whiskey?

At least 51 percent of the mash must be rye. The requirement is in 27 CFR 5,143, the American standard for the naming of whisky.

The rest of the mash bill is free. In practice, makers fill that in with corn, malted barley or wheat. If the rye share is below 51 percent, the bottle may not carry the class name rye whisky, however much rye is in it.

What requirements apply to distilling, maturing and bottling?

The distillate may leave the still at no more than 80 percent alcohol. Filling takes place at 62.5 percent at most, in new charred oak casks. Bottling is allowed from 40 percent.

The limit on distillation keeps character in the distillate: the higher you distil, the more neutral the alcohol. The requirement of a new charred cask means that each cask may only be used once for rye. Those casks then often move on to Scotland, Ireland or Japan.

When can it be called straight rye whiskey?

From two years of maturation in the new charred oak cask. Straight rye also may not contain added colouring, flavouring or blending material.

Without that word straight the two years do not apply and a limited addition of colouring and flavouring is permitted. The word straight on the label is therefore not a decorative word but a legal indication of age and purity.

Why is Canadian whisky also called rye?

In Canada, Canadian whisky, Canadian rye whisky and rye whisky are legally the same product. The name says nothing there about the amount of rye in the mash.

The Canadian standard requires a distillate of grain mash, at least three years of maturation in small wood, and that the mash, the distillation and the maturation take place in Canada. The lower limit at bottling is 40 percent. Flavouring is permitted. A bottle of Canadian rye can therefore be made with virtually no rye.

What is the difference from bourbon?

Bourbon requires at least 51 percent corn, rye at least 51 percent rye. Otherwise the same limits apply: 80 percent at distillation, 62.5 percent at filling, new charred oak.

There is a difference in what you may add. With bourbon, adding colouring and flavouring is not permitted in any form; with rye whisky that is not straight, it is allowed within limits. With straight rye, adding is again excluded.

Short answer

Short answers to related questions

How old does rye whiskey have to be at a minimum?
For the class rye whisky there is no minimum. Straight rye requires at least two years in the cask.
How much rye is in Canadian rye whisky?
The Canadian standard does not require that. It only requires a grain mash, three years in small wood and 40 percent.
What does small wood mean in the Canadian rules?
The wooden cask in which Canadian whisky matures. Only the time in that cask counts towards an age statement.
May straight rye whiskey be coloured?
No. With straight rye, added colourings, flavourings and blending materials are not permitted.
