About this bottle

Baladin Isaac is een Italiaans witbier van Birrificio Baladin, voor het eerst gebrouwen in 1997 en vernoemd naar Isaac, de zoon van oprichter Teo Musso die dat jaar werd geboren. Er gaan gerstemout, tarwemout en tarwe in, aangevuld met een mengsel van kruiden en citrusschil. Het geldt als het eerste Italiaanse ambachtelijke witbier. Deze grote fles bevat 75 cl en heeft 5% vol.

Baladin staat in Piozzo, een dorp in de Langhe in Piemonte, in de provincie Cuneo: een streek die vooral om wijn bekendstaat. Daar opende Teo Musso in 1986 een café met tweehonderd Europese bieren, en in 1996 begon hij in een garage naast de zaak zelf te brouwen, in omgebouwde melkvaten. De hoofdvestiging, Casa Baladin, staat nog altijd in Piozzo.

De bieren van Baladin zijn uniek omdat deze niet worden gefilterd, niet worden gepasteuriseerd en hergisten op de fles. Dit is de reden dat het bier langzaam evolueert waardoor er een natuurlijke variatie in smaak ontstaat. Om de kwaliteit van de bieren te waarborgen, is een relatief lang proces nodig. Bij de meeste bieren kost het drie maanden om de bieren te maken: één maand voorbereiding, één maand hergisting en één maand stabilisatie. Teo ziet bier als een ambachtsproduct dat bij voorkeur gecombineerd wordt met eten.

Ingredients

4 pizza bases
400 grams of tomato passata
3 balls of mozzarella
1 bunch of basil
4 tablespoons of olive oil

Method

Preheat the oven as hot as possible, at least 250 °C, with a baking tray inside.
Season the passata with salt and spread a thin layer on the pizza bases.
Tear the mozzarella into pieces, spread them over the sauce and drizzle with olive oil.
Bake the pizzas for 8 to 10 minutes until the crust is brown and the cheese is bubbling.
Top with fresh basil leaves and serve immediately.

Ingredients

160 grams young Gouda

Method

Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
Only cut or break the cheese just before serving.

12 mini spring rolls
150 millilitres sweet and sour sauce

Method

Preheat the oven to 200 °C or heat frying oil to 180 °C.
Bake the spring rolls in the oven for 12 to 15 minutes or deep-fry them for 3 to 4 minutes until golden brown and hot.
Drain briefly and serve with the sweet and sour sauce.
