About this bottle

Baladin Rock’n Roll is een Italiaanse American pale ale van Birrificio Baladin, in 2012 gemaakt voor het honderdste nummer van de Italiaanse editie van Rolling Stone. De hop komt uit Piemonte en de Verenigde Staten, de mout uit Basilicata en Apulië, en er gaat peper uit India en Brazilië in. Op die peper na is vrijwel alles van Italiaanse herkomst. Deze fles bevat 33 cl.

Geduld hoort bij Baladin. Onder de naam Riserva Teo brengt de brouwerij bieren uit die jaren hebben gelegen, zoals Terre 2012 en Lune 2016. De Xyauyù-reeks verschijnt in jaargangen, en met Metodo Classico 60 Months verscheen een bier dat al in de naam aangeeft hoe lang er gewacht is. Zo laat de brouwerij uit Piozzo zien dat bier, net als de wijn uit de omringende Langhe, kan rijpen.

Rock'n'Roll is een bier met een witte schuimkraag en een aanhoudende afdronk. Het heeft een diepe kleur en een licht, homogeen troebel uiterlijk. De eerste peperige aroma's maken plaats voor lichte kruiden en tonen van granen, met een evenwichtige harmonie tussen frisheid en warmte.

Net als in een moderne musical, laten de granen bij het drinken hun zoete tonen horen, terwijl de combinatie van peper, specerijen en hop een krachtig tegenwicht biedt.

Ingredients

1.5 kilos of chicken, whole or in pieces
2 lemons
1 bunch of thyme
6 cloves of garlic
4 tablespoons of olive oil
800 grams of baby potatoes
salt and pepper

Method

Preheat the oven to 200 °C.
Rub the chicken with olive oil, salt and pepper and place it in a large ovenproof dish.
Arrange the halved baby potatoes, the halved lemons, the unpeeled garlic cloves and the thyme around the chicken.
Roast chicken pieces for about 45 minutes and a whole chicken for 70 to 80 minutes, until the juices at the thigh run clear.
Let the chicken rest for 10 minutes and squeeze the roasted lemon over it.

Method

Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
Only cut or break the cheese just before serving.

12 bitterballen
mustard

Method

Heat the frying oil to 180 °C.
Fry the bitterballen for 4 to 5 minutes until golden brown and piping hot all the way through.
Drain on kitchen paper and serve immediately with mustard.
