Ingredients

  • 500 grams of steak or chicken thigh
  • 12 corn tortillas
  • 2 limes
  • 1 red onion
  • 1 avocado
  • 1 bunch of coriander
  • 200 grams of salsa

Method

  1. Grate the zest of one lime, squeeze it and marinate the meat in it with oil, salt and pepper for 20 minutes.
  2. Finely chop the red onion, slice the avocado and pick the coriander leaves.
  3. Grill steak for 2 to 3 minutes per side, chicken thigh for 5 to 6 minutes per side until cooked through.
  4. Let the meat rest for 5 minutes and cut it into strips.
  5. Briefly warm the tortillas in a dry pan.
  6. Fill the tortillas with meat, avocado, onion, salsa and coriander and serve with wedges of the second lime.

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

Ingredients

  • 200 grams of tortilla chips
  • 2 avocados
  • 1 lime
  • 1 tomato
  • 1 red onion

Method

  1. Cut the red onion and the tomato into small cubes.
  2. Mash the flesh of the avocados with the juice of the lime and a pinch of salt.
  3. Stir in the onion and the tomato and season with pepper.
  4. Serve the guacamole straight away in a bowl with the tortilla chips alongside.
