About this bottle

Gouden Carolus Ambrio is een amberkleurig bier van hoge gisting van Brouwerij Het Anker, met 8% vol. Het recept gaat volgens de overlevering terug tot 1421 en is gebaseerd op de Mechelschen Bruynen, het amberbier dat de Mechelaars eeuwenlang als hun eigen stadsbier dronken. Het Anker is de enige brouwerij die dit type nog maakt, met uitsluitend Belgische hop en een hergisting op de fles.

Het Anker is in Mechelen, on the edge of the Groot Begijnhof. The first mention of the brewery dates from 1471, when sisters brewed beer there in a hospice of the town. The bond with the old inner city has remained: the brewery is still in the same place, on the Guido Gezellelaan.

Gouden Carolus Ambrio is brewed in a craft manner based on the centuries-old recipe of the Mechelschen Bruynen. Ambrio is an ‘amber’ beer brewed with ‘brio’. This amber-coloured top-fermented beer originates from the traditional beer of the city of Mechelen. Just as every city had its own typical beer, for hundreds of years the people of Mechelen drank their own amber-coloured beer: “Mechelschen Bruynen”.

Onze brouwerij is de enige die dit type bier nog brouwt. Volgens de overlevering dateert het basisrecept van dit bier uit 1421 en is dit dus het oudste nog gebrouwen bier van de brouwerij. Dit gearomatiseerde en pittige lichbtruine degustatiebier mag tamelijk fris geschonken worden. Hergist in de fles.

De huidige versie ervan is iets zwaarder dan vroeger en wat fijner gehopt. Het evenwicht tussen de verschillende moutsoorten, de fijne hoppen en typische aroma’s door kruiden zorgen ervoor dat dit bier de volmondigheid van bruine bieren combineert met de frisheid van blonde bieren.

Dit gearomatiseerde en pittige lichtbruine degustatiebier mag tamelijk fris geschonken worden. Hergist in de fles.

Ingredients

2 kilos spare ribs
6 tablespoons barbecue sauce
2 tablespoons honey
2 teaspoons smoked paprika
2 cloves garlic
4 corn cobs

Method

Preheat the oven to 150 °C.
Rub the spare ribs with the paprika, salt and pepper, wrap them in aluminium foil and cook them in the oven for 2 to 2.5 hours.
Mix the barbecue sauce with the honey and the crushed garlic.
Boil the corn cobs for 10 minutes in salted water.
Grill the spare ribs and the corn for 10 minutes on the hot barbecue, brushing the ribs regularly with the sauce until they shine.

160 grams of Leyden cumin cheese

Method

Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
Only cut or break the cheese just before serving.

Ingredients

200 grams pâté de campagne
100 grams gherkins
1 baguette

Method

Take the pâté out of the fridge a quarter of an hour before serving.
Slice the pâté and cut the baguette into rounds.
Serve on a board with the gherkins.
