Mango with coconut riceWith dessertMango with coconut rice

Ingredients

  • 2 ripe mangoes
  • 200 grams of sticky rice
  • 400 millilitres of coconut milk
  • 60 grams of sugar
  • 1 tablespoon of sesame seeds

Method

  1. Rinse the sticky rice until the water runs clear and leave it to soak in cold water for at least 1 hour.
  2. Steam the drained rice for 20 to 25 minutes until cooked.
  3. Heat the coconut milk with the sugar and a pinch of salt until the sugar has dissolved, without letting it boil.
  4. Stir two thirds of the coconut milk into the warm rice and leave covered for 15 minutes to soak in.
  5. Toast the sesame seeds golden brown in a dry pan.
  6. Peel the mangoes, slice them and serve with the rice, the rest of the coconut milk and the sesame seeds.

Ingredients

  • 200 grams fresh ricotta
  • 2 tablespoons honey

Method

  1. Spoon the ricotta into a small bowl.
  2. Pour the honey over just before serving.

Ingredients

  • 1 baguette
  • 150 grams soft goat's cheese
  • 2 tablespoons honey
  • 4 sprigs of thyme

Method

  1. Preheat the oven grill.
  2. Slice the baguette and lightly toast the slices on one side.
  3. Top the untoasted side with goat's cheese and sprinkle with thyme leaves.
  4. Place under the grill for 3 to 4 minutes until the cheese is soft and lightly coloured.
  5. Drizzle with honey and serve warm.
