A gin made for the plate
Gastro is conceived as a gin to go with food. The recipe is divided into four groups: the classic juniper botanicals, citrus, fennel and pepper. The citrus group consists of grapefruit, Amalfi lemon, verbena and Portuguese orange; the fennel goes in as both seed and blossom.
The pepper group is the most striking: Sichuan pepper, allspice, voatsiperifery from Madagascar, Sarawak pepper and long pepper. Five kinds, each with its own kind of heat.

- Onder de BoompjesWhere it is distilled.
The gin was developed by master distillers of Onder de Boompjes together with Jonnie Boer, the chef of De Librije. That explains the approach: not a gin that has to stand on its own, but one that has to work alongside a dish.
Fennel is the key there. Fennel seed has an aniseed side that goes well with fish and with citrus; the blossom adds something floral.
The five types of pepper each do something different. Sichuan pepper tingles and lightly numbs, voatsiperifery is floral and woody, long pepper is sweet and sharp. Together they give a heat that is broader than from a single kind.
Five types of pepper, each with its own kind of heat.
What this bottle goes with
This is above all a bottle for the table: with fish and fennel, with oysters, or as an aperitif with a neutral tonic and a strip of grapefruit peel.
At 45 percent, the pepper remains recognisable even in a tall glass.
