Why here

Rum from the United States

Louisiana has grown sugar cane for centuries; the Mississippi delta is warm and humid enough for it. Even so, American rum is a rarity in the Netherlands. Bayou comes from the south of that state.

The molasses comes from the oldest family-owned sugar mill in the United States. Distilling is done entirely in copper pot stills. That is more labour-intensive than a column, but it lets more character through.

A bayou is a slow-moving watercourse in the swamps of Louisiana. The name immediately places this rum in its landscape: cane fields, swamp and humid heat.

It is distilled from local molasses in copper pot stills, batch by batch. The house’s aged versions are built up in bourbon casks using a solera system. Logical, in a country where those casks are lying around for the taking.

This bottle is the white one: unaged, and so the purest expression of what the still does.

A bayou is a slow-moving watercourse in the marshes.

Practical

What this bottle goes with

White pot still rum has more character than ordinary white blended rum; in a daiquiri or mojito you notice it straight away.

Neat over ice works too, if you want to hear what the still is doing.
