Why here

Wooden stills, and nowhere else any more

Demerara Distillers is the last place in the world where distilling is still done on wooden stills. They come from three sugar plantations that have since closed (Port Mourant, Enmore and Versailles) and now stand together on one site at Diamond.

That is why a single distillery can make very different rum styles. Alongside the regular range, we also stock bottles named after those individual stills.

About the distillery

Three plantations, one site

  • The house in brief
  • 1732The year that goes with the Port Mourant still.
  • 1880Year of construction of the wooden Enmore column.
  • 1983Demerara Distillers comes into being through a merger.
  • DiamondWhere all the stills are now.

When the Guyanese sugar industry shrank, the plantations disappeared one by one. Demerara Distillers collected their distilling equipment and put it back into operation on its own site at Diamond. That is why there are now stills standing side by side that are centuries apart.

The Port Mourant is a double wooden pot still made of greenheart; the house dates it to 1732. The Enmore is a Coffey column from 1880, also of greenheart with copper plates, one of the few wooden column stills still in existence. The Versailles is a single wooden pot still, moved in 1978 when that plantation closed.

Everything is made from molasses and matures in Guyana itself. In that climate much more evaporates per year than in Europe, which explains part of the price of the older bottles.

The last wooden kettles in the world, together on a single site.

Which bottle

Where best to start

The 15 Years Old is the bottle the brand is known for and the logical starting point.

If you want to taste the difference between the stills, put the Port Mourant, the Enmore and the Versailles side by side. That makes for an evening of study, but it is the nicest way.

The 3 Years White is meant for cocktails: it has been aged and then filtered until it is clear again.
