A sherry house that matures rum
Valdespino is a name from the sherry world. This rum therefore does not mature in the Caribbean but in the bodega in Jerez de la Frontera, in the middle of the Andalusian sherry region.
The casks it matures in previously held very old and fine oloroso. That explains why this rum leans more towards sherry, nuts and dried fruit than a tropically aged bottle.

This is a small-batch rum distilled from sugar cane. According to the house, its origins lie in the first batch of Cuban rum from 1940.
Ageing takes place in a very limited solera, with an average age of eighteen years. In a solera, young and old casks are blended step by step; a portion of the oldest always remains in the system.
The fact that the casks lie in Jerez and not in the tropics makes a difference. Maturation in a temperate climate is slower and gives a different structure than tropical maturation, where the annual loss is much higher.
Eighteen years on average, in casks that previously held old oloroso.
What this bottle goes with
Neat, in a tulip glass. A bottle like this deserves the time; mixing it would be a waste of the solera.
Interesting for anyone who drinks sherry and wants to taste what those casks do to rum.
