What calvados goes with

Calvados is distilled cider from Normandy, made from apples and sometimes pears, and then laid down in oak.

Young calvados keeps the apple at the front and is fresh. The longer it lies on wood, the more dried apple, nut and cinnamon come in.

In Normandy, a small glass is poured in the middle of a long meal, the trou normand. That is not folklore but a practical pause between two heavy courses.
