Why this works together

Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.

What is needed

Smoked salmon with dillWith the mealSmoked salmon with dill

Ingredients

  • 200 grams smoked salmon
  • 1 bunch of dill
  • 100 grams crème fraîche
  • 8 small toasts

Method

  1. Finely chop the dill and stir half of it into the crème fraîche with a little pepper.
  2. Spread the toasts with the crème fraîche.
  3. Top with a piece of smoked salmon and garnish with the rest of the dill.
Aged GoudaWith the cheeseAged Gouda

A cigar with Paul John Roulette

We have worked out this cigar alongside Amrut Fusion, another whisky from India.

Cigars
Our choice

Padrón 1964 Anniversary Principe

Nicaraguan puro of 114 mm, short and dense, with enough weight alongside 50 percent ABV.

Why this works together

At 114 mm, the Principe is the shortest size in Padrón's 1964 series. Nicaraguan tobacco from that line is dense and sweet with black pepper underneath, even in a small size. Whisky from a warm climate matures faster and comes in emphatically at 50 percent ABV; that calls not for a long, mild cigar but for a short one with weight. The spiciness in the finish and the pepper in the tobacco find each other.

Also good with this whisky

  • Oliva Serie V Double RobustoRobusto of 124 mm, longer and just as full, for those with more time.
  • Partagás Serie D No. 5Cuban petit robusto of 110 mm, earthier than the Nicaraguans.
  • Hoyo de Monterrey Petit RobustoPetit robusto of 110 mm, milder, giving the fruit in the whisky more room.

We do not sell cigars; we supply the whisky.
