Why here

What ‘in quota’ means

In quota is Italian for ‘at altitude’. It refers to the grains, which are grown at altitude in Trentino, and to the spring water from the Dolomites. The rye comes from the Altopiano di Piné, the barley, from old varieties, from the Val di Non.

Villa de Varda is a grappa distillery in Mezzolombardo, owned by the Dolzan family, by now the sixth generation. In October 2023 they ran their discontinuous copper stills on grain for the first time instead of on grape pomace. The inQuota line comes from that.

The difference lies in the cask: each version gets its own Italian finish.

What makes inQuota special is not that it is Italian whisky, but that it smells of Italian casks. Besides a rye expression there are single malts finished in amarone casks and in casks that held passito from Pantelleria.

The most striking is the finish in wood of the red spruce from the Val di Fiemme, the same wood that violins are made from. That gives a resinous, balsamic note that you will not find anywhere else in the whisky world.

Maturation takes place at altitude, where the difference between day and night temperatures is greater than in Scotland, so the cask works faster. The alcohol percentage differs per batch; check the label of the bottle itself for that.

Practical

What these bottles go with

For anyone who finds the cask finish the most interesting part of whisky. The spruce wood finish is a taste you have to want to seek out.

Put the rye next to one of the single malts; the difference in grain is clearer here than with a lot of Scotch whisky.
