Why here

Whisky that was only allowed from 1999

Distilling grain was banned in Switzerland for decades. Only after the relaxation of the alcohol legislation in 1999 did the Locher brewery in Appenzell start making whisky; the first Säntis Malt came out in 2002.

What sets it apart is the casks. It is matured in old oak beer barrels from the brewery’s own cellars, barrels that were used until the early seventies to transport beer to pubs.

About the casks

Beer in wood

  • How we work, in brief
  • AppenzellAt the foot of the Alpstein massif.
  • Beer kegsFrom the brewery's own cellars.
  • 1 cmThat is how deep the beer extract sits in the staves.
  • HolsteinThe still, with column.

The casks were sealed on the inside with brewer's pitch. That pitch was removed for whisky use, and underneath is wood into which beer extract has soaked about a centimetre deep in the staves. That is what gives the whisky its own signature.

It is distilled not on Scottish pot stills but on equipment from Arnold Holstein in Markdorf: a pot with a column. Besides the beer casks, it is finished on port, sherry, bourbon, sweet wine, pinot noir and rum.

The peated Edition Dreifaltigkeit was named European Whisky of the Year by Jim Murray in 2010.

Beer that spent a long time in wood, and is now coming out again.

Practical

What these bottles go with

Drink it neat, and with attention. A cask that previously held beer does something different to whisky than a bourbon or sherry cask, and you will notice.

Nice for anyone who drinks both beer and whisky. See also Gouden Carolus, where the link between beer and whisky goes one step further.
