Blending as a craft in itself
In nineteenth-century Ireland it was not the distillery but the merchant who decided what went into the bottle. Grocers and wine merchants bought casks, laid them down under their own name and put together their own blend. Two Stacks is taking up that trade again.
Three friends from Newry started it there in 2020; since 2022 they have their own warehouse and bottling plant. They are remarkably open about what is in the bottle: the number of components, the casks and the ages are stated as far as possible, even though it concerns young whiskey.
The bottles we have in stock
From the five-part house blend to a peated single malt.
Two chimneys as a beacon at sea
- The company in brief
- 2020Founded by three friends.
- NewryWhere the warehouse stands, in County Down.
- 2022Own bonded warehouse and bottling facility.
- DundalkWhere the two chimneys stood.
The name refers to the two chimneys of the former Dundalk distillery. They were so tall that they served as a landmark for shipping on the Irish Sea. Dundalk lies sixteen kilometres further south, across the border; so the brand is named after a place where it is not itself located.
The First Cut is the house blend and consists of five components: grain whiskey from new oak and from bourbon casks, malt whiskey, pot still from sherry casks and a small share of peated malt. Everything is young, and that is a deliberate stance: older is not automatically better.
Smoke & Mirrors goes in another direction: a peated single malt partly finished in casks from an Irish imperial stout. And then there is the hundred-millilitre tin, meant for the rucksack rather than the display cabinet.
Young whiskey, and that is what they stand for.
What these bottles go with
For anyone who knows Irish whiskey from the big houses, this is a different sound: more open about the composition, and without the reflex that older is better.
Smoke & Mirrors is the bottle to pick if you want to know how smoke works out in Irish whiskey.
