About this bottle

González Byass Matusalem 30 Years Old is een cream sherry uit Jerez in Spanje, in de categorie VORS: Very Old Rare Sherry, met een gemiddelde leeftijd van dertig jaar. De wijn bestaat voor ongeveer driekwart uit palomino en voor een kwart uit pedro ximénez en rijpt in een solera. Dit is de halve fles van 37,5 cl. Op het etiket staat 20,5% vol.

González Byass is based in Jerez de la Frontera, in the province of Cádiz, the heart of the sherry region. Manuel María González founded the bodega in 1835; the street on which the company is located now bears his name. After five generations the house is still in family hands and ages its sherry in a solera system of American oak casks of 600 litres.

Matusalem is de naam van een cream sherry van González Byass. Verwar het niet met Méthusalem: dat is namelijk een 6 liter fles champagne. Voor de productie van Matusalem worden palomino en pedro ximenez druiven gebruikt. Van de verschillende druiven worden twee aparte wijnen gemaakt die na een rijping van 15 jaar in een solera-systeem met elkaar worden gemengd om nog eens 15 jaar als blend te rijpen in een solera. Het resultaat is donker van kleur met de smaak van rozijnen, specerijen en sigarenkistjes. Heerlijk bij een kaasplank.

Ingredients

400 gram kaas in drie of vier soorten
200 gram droge worst
100 grams of olives
1 baguette
100 gram noten
2 tablespoons of mustard

Method

Haal de kaas en de worst een half uur van tevoren uit de koelkast.
Snijd de kaas in plakken of blokjes, de worst in dunne plakjes en het stokbrood in schijven.
Put everything on a board with the olives, the nuts and a small bowl of mustard.

160 grams aged Gouda

Method

Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
Only cut or break the cheese just before serving.

12 bitterballen
mustard

Method

Heat the frying oil to 180 °C.
Fry the bitterballen for 4 to 5 minutes until golden brown and piping hot all the way through.
Drain on kitchen paper and serve immediately with mustard.
