What is needed

Ingredients

  • 4 entrecôtes of 200 grams
  • 2 tablespoons olive oil
  • 4 sprigs of rosemary
  • 1 kilo potatoes
  • 1 bunch of parsley
  • coarse sea salt and pepper

Method

  1. Take the entrecôtes out of the fridge half an hour before grilling and brush them with olive oil and chopped rosemary.
  2. Parboil the potatoes for 15 minutes, cut them into wedges and roast them with oil for 25 minutes in an oven at 200 °C.
  3. Grill the entrecôtes on a very hot grill for 2 to 3 minutes per side for a pink centre.
  4. Let the meat rest for 5 minutes under aluminium foil and sprinkle with coarse sea salt and pepper.
  5. Sprinkle the potatoes with chopped parsley and serve with the meat.

  • 160 grams mature cheddar

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

  • 150 grams smoked almonds

Method

  1. Toast the almonds in a dry pan for 2 to 3 minutes so they are crisp and fragrant again.
  2. Leave them to cool until lukewarm.
  3. Serve in a small bowl.
