What is needed

Ingredients

  • 800 grams of lamb shoulder, diced
  • 1 kilo potatoes
  • 3 carrots
  • 2 onions
  • 1 litre of beef stock
  • 4 sprigs of thyme

Method

  1. Sprinkle the lamb with salt and pepper and brown it all over in oil in a casserole.
  2. Add the onions in wedges and the carrots in pieces and fry them for 5 minutes.
  3. Pour in the beef stock, add the thyme and leave everything to simmer gently, covered, for 1 hour.
  4. Add the potatoes in rough chunks and stew for another 45 minutes until the meat and potatoes are tender.
  5. Remove the thyme sprigs and season with salt and pepper.

  • 160 grams of Leyden cumin cheese

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

Ingredients

  • 150 grams smoked almonds

Method

  1. Toast the almonds in a dry pan for 2 to 3 minutes so they are crisp and fragrant again.
  2. Leave them to cool until lukewarm.
  3. Serve in a small bowl.
