Rabbit with prunesMain courseRabbit with prunes

Ingredients

  • 4 rabbit legs
  • 200 grams of prunes
  • 2 onions
  • 330 millilitres of dark beer or red wine
  • 2 tablespoons of flour
  • 40 grams of butter
  • 4 sprigs of thyme

Method

  1. Season the rabbit legs with salt and pepper, dredge them in the flour and brown them all over in the butter.
  2. Take the meat out of the pan and fry the chopped onions for 5 minutes.
  3. Return the meat to the pan, pour in the beer or wine and add the thyme and the prunes.
  4. Leave to simmer gently, covered, for about 1.5 hours until the meat is tender and comes away from the bone.
  5. If necessary, reduce the sauce a little without the lid and season with salt and pepper.

  • 160 grams mature cheddar

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

Ingredients

  • 12 Medjool dates
  • 6 rashers of streaky bacon

Method

  1. Preheat the oven to 200 °C.
  2. Remove the stones from the dates if necessary and halve the bacon slices.
  3. Wrap half a slice of bacon around each date and place them seam side down on a baking tray.
  4. Bake for 12 to 15 minutes until the bacon is crisp and cooked through.
  5. Leave to cool briefly and serve warm.
