Why here

The apricot of the Wachau

Marille is the Austrian word for apricot. In the Wachau, the Danube valley between Melk and Krems, the fruit is a regional product: the Wachauer Marille has a protected designation of origin, which means only apricots from that defined area may bear the name.

Bailoni makes all sorts from it: jam, syrup, liqueur and distilled spirits. For this bottle, the description says fully ripe apricots are stoned, mashed, fermented, distilled three times and then left to rest for two years.

We have one in stock, in the round bottle the house is known for.

What does Marille mean?

Marille is Austrian for apricot; in Germany the same fruit is called Aprikose. A Marillenbrand or Marillenschnaps is therefore an apricot spirit. It is one of Austria's best-known styles, along with Williams pear and Zwetschge.

About the brand

The first apricot distillery in the Wachau

  • The house in brief
  • 1872Bailoni begins in Krems-Stein.
  • Eugenio BailoniThe founder, originally from Trentino.
  • 1.500The number of apricot trees it owns.
  • FamilyIndependent, passed down from generation to generation.

Eugenio Bailoni came from Trentino in northern Italy and brought distilling know-how with him. He married Rosa Amon from the Wachau and started out in Krems-Stein in 1872. The house is regarded as the first apricot distillery in the region.

Bailoni is still independent and in family hands. The company has around fifteen hundred apricot trees of its own and is one of the larger processors in the region. Besides distilled spirits, it produces liqueur, jam, syrup, nectar and oil.

The round bottle Bailoni uses was introduced in the early twentieth century and deliberately departs from the usual shape.

Wachauer Marille: a protected name

The Wachauer Marille carries a protected designation of origin. Only apricots grown in the defined area of the Wachau may bear that name. The region lies along the Danube in Lower Austria and is also known for its terraced vineyards.

Which bottle

Who is this bottle for?

Apricot spirit is one of the most approachable styles on this shelf: the fruit is recognisable and it is not an acquired taste, as some plum or grape spirits can be.

If you are looking for an Austrian apricot and want to start with the region itself, this is the bottle. We have one in stock.
