Pisco: grapes, but not wine
Pisco is distilled from wine grapes, not from the remains left after pressing. That is how it differs from grappa, marc and bagaceira: with pisco the whole fruit goes into the still as must.
Muscat grapes are used for this bottle. According to the description, the pisco is distilled twice and then aged for at least two months on American oak.
Capel is by far the largest pisco producer in Chile. In the Netherlands pisco was a rarity for a long time; we keep it on the shelf with eau de vie, obstler and slivovitz, among the other grape distillates.

What is pisco?
Pisco is a spirit made from wine grapes, produced in Chile and Peru. The two countries have their own rules: which grapes are allowed, whether water may be added and whether the distillate may age in wood differ by country. Chilean pisco is often made from Muscat grapes and may age in wood.
A cooperative of grape growers
- The house in brief
- 1938Fifteen grape growers join forces.
- ElquiThe valley in the north of Chile.
- 1.200+The number of members and affiliates today.
- LargestMore than half of the Chilean pisco market.
Capel was founded in 1938 in the Elqui Valley in northern Chile. The trigger was the crisis of the 1930s: exports collapsed and fifteen grape growers decided to join forces. From those fifteen grew a cooperative with more than twelve hundred members and affiliates, spread across several Chilean wine regions.
That makes Capel the country's largest pisco producer. According to market figures, more than half of the Chilean pisco market belongs to Capel; together with one other company, most Chilean pisco comes from these two houses.
Since 2006 Capel has also made other drinks, including rum and bottled caipirinha. The cooperative is regarded as one of the few truly successful cooperatives in Chile.
Chilean or Peruvian pisco?
Chile and Peru both make pisco and have long disagreed over the name. In practical terms there are differences: Peruvian pisco is not diluted with water and may not age in wood, so it comes off the still at bottling strength. Chilean pisco may be diluted and may age in wood. This bottle is Chilean.
Who is this bottle for?
Pisco is the base of the pisco sour, and this is a bottle you can make one with. At 35 per cent it is on the light side for a grape distillate.
If you want to get to know pisco neat, this is a good starting point: the Muscat grape is recognisable and the short spell in wood makes the drink rounder than a pisco that has not been aged.
