Twenty bottles of madeira and marsala. One shop.
Chapter 01 · What you taste
Two fortified wines with little in common
Madeira and marsala are both wine with added wine alcohol, but otherwise they differ a great deal. Madeira comes from the Portuguese island and is heated and aged for a long time: burnt and nutty. The grape determines the sweetness: sercial is dry, verdelho medium dry, bual and malmsey sweet. Marsala comes from the west of Sicily. Both are also simply poured into a glass, not just used in the kitchen.
Chapter 02 · Marsala
Marsala, from the west of Sicily
Marsala is named after the port town on Sicily and originated in the late eighteenth century, when English merchants fortified wine there for the sea voyage. Oro is golden, ambra darker, rubino red. Fine is the youngest, superiore is aged longer, vergine is dry and aged longest. Dry as an aperitif, sweet after a meal, both cool.
Chapter 03 · Madeira
Madeira, heated first and only then aged
Madeira owes its character to heat. In the past the casks travelled on ships through the tropics; now the wine spends months in heated tanks (estufagem) or lies for years under the roof of the warehouse (canteiro). The label shows the grape, an age or both. An opened bottle keeps for a long time, because the wine has already been heated and aerated.
Chapter 04 · Size
The cooking bottle and the regular bottle
The ten-centilitre bottle is for the kitchen: enough for a sauce, risotto or zabaglione, without opening a whole bottle. Marsala and madeira can take heat and keep giving flavour once the alcohol has evaporated. The 75-centilitre bottle is for pouring: lightly chilled, in a small glass. Store an opened bottle upright and cool.

Madeira and marsala from a wine and spirits merchant who knows the shelf
Both are fortified wines: wine to which alcohol has been added, so that the bottle keeps longer and some of the sweetness is retained. Madeira comes from the Portuguese island of the same name, marsala from the west of Sicily, around the town of Marsala.
Here they share one shelf because they often play the same role in the kitchen and at the table. In the list below you can filter by country if you are looking specifically for one or the other.

Madeira is heated during production: in tanks (estufagem) or slowly under the roof of the house (canteiro). That heating is the reason an opened bottle of madeira does not deteriorate within a few days, but stays good for months. That also makes it suitable for anyone who wants a glass now and then.
The styles of madeira are named after the grape and run from dry to sweet: sercial, verdelho, bual and malmsey. Marsala is classified differently, by colour (oro, ambra, rubino) and by sweetness (secco, semisecco, dolce).
In the kitchen, marsala is the classic wine for zabaione and saltimbocca; madeira goes into sauces. The cooking bottles on the shelf are intended specifically for that.
An opened bottle of madeira lasts for months. That is down to the heating during production.

Frequently asked questions
How long does an opened bottle of madeira stay good?
Considerably longer than ordinary wine. Thanks to the heating during production and the added alcohol, an opened bottle lasts for months; keep it closed and out of the sun.
What is the difference between sercial, verdelho, bual and malmsey?
They are the grapes, and at the same time they indicate the level of sweetness: sercial is the driest, malmsey the sweetest, with verdelho and bual in between.
Can I simply drink marsala too?
Yes. Part of the shelf is meant for drinking, part is cooking wine. In the shop we will point out the difference; you cannot always tell from the bottle.
Can I reserve a bottle and collect it in Bathmen?
Yes, you can. Call 0570 541 278 or email info@bockje.nl and we will have the bottle ready for you at Brink 2 in Bathmen.
Do you also ship?
Yes, we ship within the Netherlands and to around forty countries. Orders are placed through the online shop; if you have any doubts about shipping, you can give us a call.
