Why here

A London distillery that sells out in hours

Bimber works in small batches and these are usually gone quickly: the very first bottling from 2019 sold out in three hours. What arrives in the Netherlands is limited, and of two of our five bottles we have exactly one left, including The 1st Peated, the first peated whisky the house has released.

This whisky is expensive for its age, and there is a reason: everything is done by hand, from malting to bottling, and production is small. If you are not sure which one you need, give us a call. That is what we are here for.

All without colouring and without chill filtration, from 46 to just over 54 percent.

About the distillery

For the first time in over a century, whisky from London again

  • The distillery in four moments
  • 2015Dariusz Plazewski and Ewelina Chruszczyk start the distillery in West London.
  • 2016On 26 May the first casks are closed.
  • 2019The First is released: a thousand numbered bottles, sold out in three hours.
  • 2023The same couple opens Dunphail in Speyside, for peated Scotch whisky.

Bimber is located on an industrial estate in West London. Dariusz Plazewski and Ewelina Chruszczyk came to England from Poland in 2003 and started a distillery there in 2015. Bimber is Polish for home-distilled spirit; Plazewski calls himself a third-generation distiller, trained by his father and grandfather.

The method is deliberately old-fashioned. All the barley comes from one farm in Hampshire and is malted by hand at one of the last maltings in the country that has not yet automated this. Fermentation takes seven days in wooden vats from their own cooperage, twice as long as usual. The copper stills are fired over an open flame instead of steam, a method only a handful of distilleries still use, because it is difficult and requires constant supervision.

In September 2019 The First came out, the first single malt distilled and bottled in London in over a hundred years. A thousand numbered bottles, gone within three hours. Since then Bimber has appeared almost exclusively in small batches.

Fire under the still instead of steam. Springbank, Glenfarclas and Glenfiddich still do it too; otherwise it has all but disappeared from Scotch whisky.

Why is English whisky often so young?

Because the category itself is young. Whisky must mature for at least three years before it may be called that, and most English distilleries have only existed since this century. Bimber filled its first casks in 2016. What you buy now is therefore young whisky by definition; what you pay for it goes to the way of working, not to the age.

Frequently asked questions about Bimber

How much Bimber does ’t Bockje have in stock?

Five bottles, all available immediately. Of the Klub Edition and The 1st Peated we have exactly one left.

Which Bimber is best to try first?

The Ex-Bourbon Oak Casks. That is the core bottling and the clearest introduction to the house style: fruity and full, at just over 51 percent.

Why is Bimber so expensive for a young whisky?

Because everything is done by hand and production is small: barley from a farm, hand-malted, seven days of fermentation, kettles over an open fire and bottling on site. You pay for that way of working, not for age.

Is Bimber Scotch whisky?

No, English. The distillery is in West London. It was the first whisky in over a hundred years to be distilled and bottled in London.

What does the name Bimber mean?

Polish for home-distilled spirit, in other words moonshine. The founder comes from Poland and learned the craft from his father and grandfather.

Does ’t Bockje also ship Bimber abroad?

Yes. We ship to around forty countries. Email info@bockje.nl if you want to know whether your country is included.
