The wood and the barley
Westland was founded in Seattle in 2010 and has belonged to Rémy Cointreau since 2017. The house revolves around two questions: what does local wood do, and what does local barley do.
The standard recipe uses five barley malts, fermented with Belgian beer yeast and matured for at least twenty-four months in new American oak. More than sixty barley varieties have been distilled, compared with the two or three that are common industrially.
The bottles we have in stock
The Outpost series has three tracks: Garryana for the wood, Colere for the barley variety and Solum for local peat.

An oak without a timber supply chain
- The special wood

Quercus garryana grows only in the lowlands between southern British Columbia and northern California. The wood is brittle, twisted and splits easily and yields little usable stave wood, and there simply was no commercial supply chain.
Westland set up that chain itself, with foresters, sawmills and a cooperage. Because the species' habitat has shrunk to roughly three to five percent of its original extent, the house is also committed to restoring that habitat.
The barley comes from the region, from partners such as Skagit Valley Malting and LINC Malt in Spokane. That makes the Colere series possible, in which one barley variety is the focus each time.
There was no wood shed for this oak, so they built one themselves.
What these bottles go with
Drink it neat. With a bottle that revolves around the wood or around a single barley variety, that is the only way to notice what it is about.
American single malt is a fast-growing category. Anyone who wants to know what it means will do well to start here.
