Why here

Champagne for those who like it dry

Ayala is known for a distinctly dry style: less sugar goes into the final dosage than at most big houses. That makes the champagne tauter and fresher, and especially pleasant as an aperitif or with shellfish.

The blanc de blancs in gift box is one of the most beautiful gift bottles we have. Not sure which one you need? Just give us a call. That is what we are here for.

Briefly explained

What ‘extra aged’ does to champagne

  • Ageing on the lees
  • MinimumFifteen months for regular champagne.
  • LongerMore notes of bread, brioche and nut.
  • BubblesBecomes finer the longer it rests.
  • Extra brutLow dosage: tight and dry.

After the second fermentation, champagne rests on the dead yeast cells. These slowly release flavour compounds (the process is called autolysis), and that produces the notes of fresh bread, brioche and nuts that give champagne its character.

The longer that ageing lasts, the more pronounced it becomes and the finer the bubbles. The legal minimum is fifteen months; a bottle with extra aged on the label has aged significantly longer.

Combine that with a low dosage and you get a champagne that is tight and dry yet still has depth. That is exactly the style of this house.

The bread note in champagne comes from the yeast, not from the wood or the grape.

Frequently asked questions about Ayala

How many Ayala does ’t Bockje have in stock?

What is distinctive about Ayala?

A distinctly dry style: less sugar goes into the final finishing than at most large houses, which makes the champagne tauter and fresher.

What does extra aged mean?

That the champagne has spent longer than the legally required fifteen months on the lees. That gives more notes of bread and brioche and finer bubbles.

Where does that bread note in champagne come from?

From the dead yeast cells the wine matures on. They slowly release flavour compounds; that process is called autolysis.

Which bottle is suitable as a gift?

The A/18 Blanc de Blancs Extra Brut, which comes in a luxurious gift box.
