Chapter 01 · What you taste

Fermentation is stopped

Port is wine from the Douro whose fermentation is stopped halfway with grape spirit. Sugar remains and the wine reaches about twenty percent; the sweetness therefore comes from the grape itself. An opened bottle of tawny or ruby lasts for weeks; an old vintage declines after a day or two.

Chapter 02 · Bottle-aged

Ruby, LBV and vintage mature in the bottle

Ruby, late bottled vintage and vintage go into the bottle young and keep their red colour and their fruit. Vintage is only declared in a good year, bottled unfiltered after two years in cask and therefore needs decanting. LBV also comes from a single year, spends four to six years in cask and is approachable sooner.

Chapter 03 · Cask-matured

Tawny and colheita mature in cask

Tawny spends years in wooden casks and turns brown and nutty, with caramel and dried fruit. The ten, twenty, thirty or forty on the label is an average of the casks in the blend, not the age of the youngest wine. A colheita is a tawny from a single harvest year, with the bottling year on the label as well.

Chapter 04 · White port

White port exists too

White port is made from white grapes and ranges from dry to sweet: seco, meio seco or lagrima. Young white port is fresh and citrusy and is served chilled, with tonic or sparkling water and a slice of lemon. If it spends a long time in cask, it turns dark and nutty, close to a tawny.

Why here

Port from a wine & spirits shop that knows its shelf

Port is a fortified wine from the Douro: grape spirit is added during fermentation, which stops the yeast and leaves grape sugar behind. That is why port is sweet and sits at around twenty percent.

This page lists every brand we stock, followed by the number of bottles. Click on a name for that brand's page.

Port is fortified wine: grape spirit is added during fermentation, which stops the yeast and leaves natural grape sugar in the wine. That is why port is sweet and around twenty per cent.

After that, the path splits. Ruby matures in large tanks or casks and stays fruity and deep red. Tawny matures for years in small casks, turns amber-brown and develops notes of nut, caramel and dried fruit. The label then states 10, 20, 30 or 40 years. LBV and vintage come from a single harvest year; a vintage spends a short time in cask and then decades in bottle.

The practical difference: an opened tawny keeps for weeks in the fridge, while a vintage should be finished within a few days.

A tawny keeps for weeks after opening. A vintage should be finished within a few days.
