Why this works together
Gekozen op de kleur (witte wijn), het land van herkomst (Argentinië), het alcoholpercentage (13,5%) en de tonen van ananas, romig en perzik in de omschrijving. Wit werkt met zuur in plaats van met tannine. Dat maakt hem bruikbaar naast alles wat zout, vet of licht van gewicht is.
Serve at 10 to 12 °C.
What is needed

Main courseWhite fish ceviche with lime
Ingredients
- 500 grams of fresh white fish
- 4 limes
- 1 red onion
- 1 red chilli
- 1 bunch of coriander
- 1 avocado
- sea salt
Method
- Cut the very fresh fish into cubes of about 1.5 cm and keep it cold.
- Squeeze the limes, cut the red onion into thin half rings and finely chop the red chilli.
- Mix the fish with lime juice, onion, chilli and sea salt and chill for 10 to 15 minutes, until the fish turns white.
- Dice the avocado and roughly chop the coriander.
- Gently fold in the avocado and coriander and serve cold straight away.

- 160 gram Camembert de Normandie
Method
- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.

Ingredients
- 120 grams of Parma ham
- 1 melon
Method
- Chill the melon and take the ham out of the fridge 20 minutes before serving.
- Halve the melon, remove the seeds and cut it into wedges without the rind.
- Arrange the wedges on a platter and drape the slices of ham over or beside them.
To serve one glass per person
