Chapter 01 · What you taste

Caraway or dill, and little sweetness otherwise

Aquavit is distilled from grain or potato, flavoured with herbs and seeds. Caraway and dill set the tone, sometimes with fennel, anise, coriander or orange peel. One bottle is clear and sharp, another has spent time in wood and is more golden and rounder. Hardly any sugar goes in, so aquavit is dry. Serve cold, usually with food.

Chapter 02 · Strength

What strength does to the herbs

Most aquavit is bottled at around forty per cent. Alcohol carries the aroma: the higher the percentage, the further caraway and anise reach and the sharper the attack. Bottled lower, a bottle is softer and easier with food. Serving cold mutes the herbs; at room temperature the same bottle is a good deal broader.

Chapter 03 · The largest house

Aalborg and the Danish caraway style

Aquavit comes from aqua vitae, water of life. In the Danish town of Aalborg it has been distilled on a large scale since the middle of the nineteenth century: clear, caraway first, ice-cold with herring or smoked fish. The Norwegian tradition matures the distillate in old sherry casks, which gives a golden, rounder bottle.

Why here

Aquavit from a wine and spirits shop that knows its shelf

Aquavit, or akvavit, is distilled from grain or potato and then flavoured with herbs. Caraway or dill must be in it: the European spirits regulation has its own category for it, and without one of those two a bottle may not bear the name.

The two main styles are close to each other. An aquavit based on caraway is the classic Danish form; an aquavit based on dill is its herbal counterpart. At Aalborg that difference is even in the name: Taffel is based on caraway, Dild on dill.

The Norwegian Linie goes a step further. It matures in sherry casks that travel around the world by ship, crossing the equator (the line) twice along the way. The casks' travel document is on the back label.

In Scandinavia aquavit is served cold, in a small glass, and almost always with food: with herring, with smoked fish and at the holidays.

Caraway or dill must be in it. Without one of those two, it is not aquavit.

Frequently asked questions

What exactly is aquavit?

A spirit made from grain or potato, flavoured with herbs in which caraway or dill plays the leading role. The European rules lay this down; the rest of the seasoning varies by house.

What is the difference between Taffel and Dild?

The seasoning. Taffel is based on caraway, Dild on dill. Otherwise they come from the same house in Aalborg.

Why is there a voyage on the Linie label?

Because the casks really make that voyage. The casks travel by ship and cross the equator twice along the way; the bottle states which ship it was and when.

How is aquavit served?

Cold, in a small glass, and in Scandinavia almost always with food. Many houses advise keeping the bottle in the fridge or the freezer.
